Tracy’s Yummylicous Chia Vegan Pudding

I have always thought that soaked chia seeds look like tadpole eggs. They also kind of look like insect butts without their six appendages. Gross. Yet, I would still enjoy them in some drinks! That is, after I pause my overactive imagination. As Rachael Ray would say, yummylicious!

Our neighbor, Tracy, shared this vegan recipe with me. She said there are many other similar recipes out there. I call this recipe Tracy’s Yummylicious Chia Vegan Pudding.

This recipe makes up to 4 small servings.

  • 1/4 cup chia

  • 3/4 cup soy milk (you could use any kind)

  • Splash of maple syrup (1 tbsp)

  • Splash of vanilla (1/2 to 1 tsp)

  • Mix and let it sit in the refrigerator for at least 4 hours or overnight.

  • Serve it by itself or with fresh fruits, like raspberries.

Note: I added 1/8 tsp of rose essence to mine. If you try it with rose essence, be sparing because it could become too fragrant. You could try other essences as well.
